1 lb cauliflower floret
10 ounces Cotija cheese
2 eggs
2 tomatoes
1 cup water

4 tablespoons wheat flour

oil ( for deep frying )

Instructions

1.Boil the cauliflower florets in a pot of salted water until tender, around 10-12 minutes. Drain and set aside to cool.

3.Roughly mash the boiled cauliflower and add to the cheese and egg mixture. Season with salt and pepper.
4.Heat oil in a frying pan over medium heat. Drop spoonfuls of the cauliflower mixture into the hot oil and fry until golden brown on both sides.
5.In a separate saucepan, heat butter and sauté the chopped onion until translucent. Add diced tomatoes and cook for a few more minutes. Season with salt and pepper.
6.To serve, pour the tomato sauce onto a plate and place the crispy cauliflower fritters on top. Squeeze fresh lemon juice over the top.
