Ingredients

350 g topside steak , sliced 1/2 inch thick
2 carrots
1 medium onion
2 garlic cloves
1 cup white wine or 1 cup sherry wine
1 teaspoon paprika , if possible Pimenton de la Vera ( really nice flavour )
1 teaspoon rosemary
1 teaspoon thyme
3 cloves
black pepper , ground
1 pinch salt , to taste
olive oil
1 tablespoon flour
1 cup of bomba rice or 1 cup calasparra rice
1 garlic clove
1 bay leaf

Topside stew is a classic dish in many countries, and rightly so, as it is delicious, filling, and can be easily customized by changing the spices and vegetables used. The recipe usually involves stewing tough cuts of meat for a few hours until they become tender and fall apart. The topside steak in this recipe is perfect for the stew as it can be cooked quickly but still retains its flavor and texture. Instructions

1.Preheat the oven to 350°F (180°C).
2.Heat a small amount of oil in a large ovenproof casserole dish.
3.Brown the sliced steak on both sides and remove from the dish.
4.Add chopped carrots and onions to the same dish and cook until soft.
5.Add minced garlic, paprika, rosemary, thyme, cloves, salt and black pepper to the dish and cook for 1-2 minutes.
6.Add wine and simmer for 5 minutes.
7.Return the beef to the dish and add enough water to just cover it.
8.Cover with a lid and bring to the boil, then transfer the dish to the oven and cook for 1-1.5 hours until the meat is tender.
9.For the rice, heat oil in a pot, add chopped garlic and bay leaf, cook until fragrant.
10.Add rice, stir to coat.
11.Add 2 cups of water and a pinch of salt, stir.
12.Bring the pot to a boil, then reduce heat to low, cover and let the rice simmer until tender and most of the water is absorbed.
13.Turn off the heat and let the rice rest for 5-10 minutes before fluffing it up with a fork.
14.Serve the cooked stew with the rice.

PROS

The topside stew is easy to make and tastes delicious when served hot with perfectly cooked rice.
