Ingredients

10 tomatoes
1 head garlic , separated into cloves but not peeled
3 tablespoons extra virgin olive oil
2 large onions , chopped
1 large carrot , chopped
1 stalk celery , chopped
2 cups water
2 tablespoons cilantro or 2 tablespoons parsley , chopped
1 tablespoon granulated sugar
2 teaspoons kosher salt ( to taste )
fresh ground pepper

Instructions

6.Using an immersion blender, puree the soup until smooth.
7.Adjust the seasoning as necessary and serve.
