Ingredients

3/4 yellow onion , chopped
3 tablespoons bacon grease , rendered and cooled but not yet solid . This can be done a day before and refrigerated
2 lbs ground beef
3 garlic cloves
3/4 lb white button mushrooms , sliced
1 egg
7 tablespoons butter , setting 4 that out to soften
1/2 cup saltine crackers , crushed to almost a powder
1 dash thyme
1 - 1 1/2 teaspoon salt
1/4 - 1/2 teaspoon pepper
2 tablespoons red wine
2 cans beef broth
1 tablespoon cornstarch
1/4 - 1/2 cup water

Instructions

1.In a large skillet, saute the chopped onion in 2 tablespoons of bacon grease until translucent, then set aside.
2.In a large mixing bowl, combine the ground beef, crushed saltine crackers, sliced mushrooms, minced garlic, an egg, 3 tablespoons of softened butter, thyme, salt, pepper, and 2 tablespoons of red wine. Mix with your hands until well-combined.
3.Form the mixture into 6 thick, oval-shaped patties.
4.Using the same skillet, add the remaining bacon grease and brown each of the patties on both sides, cooking to your desired doneness. Transfer the patties to a plate and keep warm.
5.In the same skillet, stir together 2 cans of beef broth and the sauteed onion. Whisk together 1 tablespoon of cornstarch and 1/4 cup of cold water, then add it to the skillet. Cook until the gravy thickens, then add more water if needed to reach your desired consistency.
6.Serve the patties with the onion gravy on top.
