Ingredients

2 crates fresh shiitake mushrooms
1 bag sugar snap peas ( I like Mann 's stringless brand )
2 tablespoons light olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1 can cannellini beans , drained and rinsed
1/8 cup flat leaf parsley , chopped
1/4 cup parmesan cheese , shredded
1 lemon , juice of
2 tablespoons light olive oil
1/4 teaspoon red pepper flakes
1 tablespoon honey ( raw , thick type is best )
1/4 cup red onion , chopped

Instructions

1.Preheat the oven to 400°F.
2.Clean the shiitake mushrooms and sugar snap peas. Trim the stems off of the mushrooms and cut them in half. Cut off the ends of the sugar snap peas and then slice them in half.
3.In a large bowl, toss the mushrooms and sugar snap peas with the olive oil, salt, pepper, and garlic powder. Spread the vegetables out onto a large baking sheet.
4.Roast the vegetables for 15-20 minutes, or until lightly browned and tender.
5.While the vegetables are roasting, prepare the dressing. In a small bowl, whisk together the lemon juice, olive oil, red pepper flakes, and honey. Set aside.
6.Once the vegetables are done roasting, transfer them to a large bowl. Add the cannellini beans, parsley, and red onion. Pour the dressing over the top of the salad and toss until everything is well coated.
7.Sprinkle the parmesan cheese over the top of the salad. Serve immediately.
