Ingredients

1 pork shoulder
3 tablespoons garlic ( chopped )
2 1/2 tablespoons fresh rosemary ( chopped )
3 tablespoons fresh parsley ( chopped )
1 tablespoon salt
1/2 teaspoon fresh cracked black pepper
1 tablespoon olive oil
1 lb broccoli rabe ( aka rapini )

3 quarts water
1/4 cup olive oil
2 -3 garlic cloves , chopped
salt
1/4 - 1/2 teaspoon red pepper flakes
crusty Italian roll ( football shaped )
1/2 lb sliced sharp provolone cheese

This sandwich is made with juicy slow-roasted pork shoulder, sharp provolone cheese, and garlicky broccoli rabe, all piled high on a crusty Italian roll. Instructions

1.Preheat the oven to 450 degrees F.
2.Combine the garlic, rosemary, parsley, salt, black pepper, and olive oil in a small bowl.
3.Use a paring knife to make small slits all over the pork shoulder.
4.Rub the herb and garlic mixture all over the pork, making sure to get it into the slits.
5.Roast the pork in the oven for 30 minutes.
6.Lower the oven temperature to 200 degrees F.
7.Continue to roast the pork until it is tender and falls apart easily, about 4 to 5 hours.
8.Meanwhile, bring the water to a boil in a large pot.
9.Add the broccoli rabe and a pinch of salt, and boil for 1 to 2 minutes, until bright green and just tender.
10.Drain the broccoli rabe and plunge it into a bowl of ice water to stop the cooking.
11.Heat the olive oil, garlic, and red pepper flakes in a large skillet over medium heat.
12.Add the broccoli rabe, and sauté for a few minutes, until tender and slightly charred.
13.Slice the pork shoulder and build sandwiches on crusty Italian rolls with sharp provolone cheese and broccoli rabe.
