Ingredients

5 pork hocks , bones
2 green onions
2 medium sized yellow onions
1 teaspoon ginger ( Tube is ok )
1 teaspoon garlic ( Tube is ok )
water , enough to fill pot
500 g all-purpose flour
water
200 ml potatoes or 200 ml cornstarch
500 g side pork
50 ml soy sauce
50 ml mirin
1 tablespoon sugar
500 ml water
Tonkotsu Ramen is a popular Japanese-style noodle soup that’s loaded with different kinds of flavorful ingredients. Instructions

1.Add the pork hocks, green onions, yellow onions, ginger, and garlic to a large pot.
2.Cover everything with water and bring the pot to a boil. Then reduce heat and simmer for 12 to 24 hours.
3.Strain the broth to remove all the solids and set aside.
4.In a separate bowl, mix together the all-purpose flour and water until it becomes a dough. Knead the dough for 10 to 15 minutes then let it rest for at least 30 minutes.
5.Cut the dough into small pieces and roll them out till thin. Cut the dough into long thin noodle-like slices.
6.Boil the sliced doughs in a pot for a few minutes then drain and rinse.
7.Cut the side pork into small pieces and cook them over medium heat until they're crispy. Add the soy sauce, mirin, sugar, and 500 ml of water.
8.In separate bowls, place the cooked noodles, pork pieces, and broth. Then serve right away.

PROS

Tonkotsu Ramen is a hearty soup with great flavor, protein-rich broth, and delicious pork belly and tender noodles.

Great as a hot meal on a cold day or for when you need comfort food.

CONS

The ingredients may not be readily available, and the recipe requires patience and a lot of time to prepare the broth.

But it’s worth the effort to have a great home-made bowl of soup.
