Ingredients

1 egg
1 1/2 teaspoons spicy sesame oil
2 boneless pork chop slices
2 tablespoons olive oil , divided
1 tablespoon black sesame seeds , divided
2 leaves fresh basil , chopped , divided
1 leaf fresh sage , chopped , divided
3 tablespoons shredded dried kombu
1 3/4 tablespoons soy sauce ( shoyu )
1/2 teaspoon white miso paste with dashi
Toppings :
4 1/3-inch slices fish paste stick ( naruto )
1 tablespoon tonkatsu sauce
1 tablespoon sushi ginger ( shoga ) , finely chopped
1 green onion , thinly sliced
1 pinch ground black pepper
Tonkatsu Shoyu Ramen is a popular variation of ramen that originated in Tokyo, Japan. Tonkatsu refers to the crispy pork cutlet topping, while shoyu refers to the soy sauce-based broth. The dish is commonly served in ramen shops and Japanese restaurants around the world. This recipe is easy to make at home and provides a hearty and flavorful meal that is perfect for cold days or when you want a comforting bowl of noodles. Instructions

1.Hard boil the egg and peel it. Cut it in half and set aside.
2.Stir the spicy sesame oil into the tonkatsu sauce and set aside.
3.Season the pork chops with salt and pepper. Heat 1 tablespoon of olive oil in a frying pan over medium-high heat. Add the pork chops and cook for 5-6 minutes on each side until browned and crispy. Remove the pork from the pan and let it cool.
4.In a mortar and pestle, grind 3/4 tablespoon of black sesame seeds, 1 chopped basil leaf, and 1/2 chopped sage leaf until they become a paste. Set aside.
5.In a saucepan, boil 5 cups of water and add the shredded dried kombu to create a broth. Simmer for 5 minutes.
6.Remove the kombu from the broth and add the soy sauce and white miso paste. Stir until the miso paste has dissolved. Let it simmer for an additional 5 minutes.
7.Add the remaining tablespoon of olive oil to the frying pan used for the pork and set it over low heat. Add the ground sesame paste and sauté for a minute. Add it to the ramen broth and stir well.
8.Put the ramen noodles in a pot and cook according to package instructions. Drain well.
9.In a large bowl, add the cooked ramen noodles and pour the broth on top. Cut the crispy pork into thin slices and add it to the bowl.
10.Add the naruto slices, chopped green onion, chopped remaining basil and sage leaves, remaining sesame seeds, sushi ginger, and ground black pepper. Place the halved egg on top of the noodles and drizzle with spicy tonkatsu sauce.
