Ingredients

15 g butter
30 ml chopped fresh parsley
1 small onion , skinned and chopped
100 g mixed mushrooms , sliced
15 ml chopped gherkins
salt and pepper
15 ml plain flour
2 eggs , beaten
150 ml fresh milk
65 ml fresh cream
Tongue and Mushroom Supper is a dish that harkens back to traditional European cuisine where no part of the animal went to waste. Instructions

1.Cut the tongue into thin slices, about 1cm thick.
2.Heat the butter in a saucepan and fry the onion until it is soft but not brown.
3.Add the sliced mushrooms and fry for another 5 minutes until they are cooked.
4.Add the flour and gherkins to the pan and stir well.
5.Gradually pour in the milk and cream, stirring constantly to prevent lumps from forming.
6.Bring the mixture to a boil and then reduce the heat to simmer for 5 minutes.
7.Add salt and pepper to taste.
8.Add the beaten eggs to the pan and stir gently.
9.Cook the mixture for another 5 minutes until the eggs are set and the sauce has thickened.
10.Sprinkle chopped fresh parsley on top and serve hot.
