Ingredients

125 g cherry tomatoes
1 egg
3 egg whites
1/3 cup low fat cottage cheese
1 garlic clove , crushed
1 small zucchini , grated
2 tablespoons oregano , chopped coarsely
30 g Baby Spinach

Instructions

1.Preheat the oven to 180C. Grease and line a 24 x 15cm cake tin.
2.Cut tomatoes in half.
3.Heat a non-stick fry pan and cook tomatoes for 2-3 minutes or until skin splits and starting to soften.
4.Combine egg, egg whites, cottage cheese and garlic in a bowl.
5.Stir in zucchini, oregano and spinach.
6.Spread tomato mixture over base of the prepared tin.
7.Pour egg mixture over tomatoes and spread evenly.
8.Bake for about 20 minutes or until slice is cooked and browned.
