3 cups vegetable stock
1/2 cup ketchup
1 tablespoon sugar
1 tablespoon soy sauce
1 tablespoon sesame oil
2 tablespoons cornstarch
2 tablespoons cold water

Instructions

1.Cook instant rice according to package instructions and set aside.
2.Heat the vegetable oil in a wok or deep frying pan over high heat.
3.Add the cooked rice to the hot oil and stir quickly to coat the rice.
4.Remove the rice from the oil and place on a paper towel to drain excess oil.
5.In a separate pan, heat the canola oil over medium heat. Add ginger powder, onion powder, garlic powder, and stir well.
6.Add the frozen peas, steamed vegetables, diced tomato, water chestnuts, and baby corn to the pan.
7.Stir fry for 2-3 minutes or until the vegetables are tender.
8.In a mixing bowl, combine vegetable stock, ketchup, sugar, soy sauce, sesame oil, cornstarch, and cold water. Mix until there are no lumps.
9.Pour the mixture into the pan with vegetables and stir well.
10.When the sauce thickens, add the rice back to the pan and mix well.
