Ingredients

2 lbs fully ripened fresh tomatoes ( about 4 large )
1 jalapeno pepper , seeded and finely chopped
1 tablespoon grated lime zest
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 tablespoons tequila
2 tablespoons lime juice
1 tablespoon orange-flavored liqueur
1 1/2 lbs shrimp , peeled , deveined , and boiled ( use large or jumbo shrimp )

Instructions

1.Preheat oven to 400°F( 200°C ).

3.Place the mixture in a large baking dish and bake in the oven for 25~30 minutes until the tomato skin wrinkles and takes on some black color.
4.Remove from the oven and strain the mixture through a food mill or large fine-meshed sieve placed over a large bowl.
5.Stir tequila, lime juice, and orange-flavored liqueur.
6.Season the boiled shrimp with salt and pepper.
7.Chill each glass before serving.
8.Add seasoned shrimp to each margarita glass.
9.Pour the tomato mixture into the glasses.
