Ingredients

1 cup poha ( flattened or beaten rice )
1 stalk curry leaf , chopped
1 1/2 teaspoons salt
2 medium green chilies
1 tablespoon lime juice
1 1/2 tablespoons oil
2 onions , chopped
1 tomatoes , medium-sized , chopped
1/4 cup ground nuts , crushed
1/4 cup cilantro , for garnishing
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 potato , small-sized , diced
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seed

Instructions

1.Rinse the poha in a colander under running water and drain off the excess water. Set aside.
2.Heat oil in a large frying pan over medium heat.
3.Add the mustard and cumin seeds to the hot oil. Allow to sizzle for a few seconds.
4.Add the chopped onions and sauté until the onions turn translucent.
5.Add the diced potato and cook for a minute or two until they are cooked.
6.Add the chopped green chilies along with the curry leaves and stir for a minute.
7.Add the turmeric powder and red chili powder and stir together for 30 seconds.
8.Add the chopped tomatoes and stir well. Cook the mixture until tomatoes get really soft and the oil seeps out of the mixture.
9.Finally, add the rinsed poha into the frying pan and cook it for around 2–3 minutes. Add salt to taste and mix well. Add the crushed groundnuts and coriander leaves for garnishing. Turn off the heat after another minute or so. Your tangy tomato poha is ready to be served.
