Ingredients

2 large onions , peeled and each cut crosswise into 6 slices
2 large ripe tomatoes , washed , stemmed , and cut crosswise into 6 slices ( firm )
2 fresh hot green chili peppers , washed , stemmed , and cut crosswise into thin rounds

Instructions

1.In a mixing bowl, whisk together vegetable oil, lemon juice, mint, coriander, and salt to make the dressing.

4.Spoon the onions out of the dressing and add to the tomato mixture. Mix well to combine.

7.Drizzle the remaining dressing over the top.
