1 kg piece filet of beef , halved horizontally
1/3 cup whole grain mustard
1/2 cup sun-dried tomato , drained , chopped finely
1 cup panko breadcrumbs , flakes ( Japanese breadcrumbs )
30 g butter , melted
10 g butter , softened
1 1/2 teaspoons cornflour
1 tablespoon balsamic vinegar
100 ml water

Instructions

1.Preheat the oven to 200°C.
2.Mix garlic and chicken stock in a jug.

5.Combine breadcrumbs, melted butter and cornflour.
6.Sprinkle the breadcrumb mixture over the beef and press it down firmly.
7.Drizzle with melted butter.
8.Roast for 25 minutes for medium-rare or longer for well done.
9.Combine balsamic vinegar and water in a saucepan. Simmer for 2 minutes.
10.Serve the beef with the sauce. Enjoy!
