Ingredients

7 ounces feta
2 tablespoons Greek yogurt ( regular or low fat )
1 egg
2 tablespoons of fresh mint , chopped
pepper
6 -7 phyllo pastry sheets ( try to find phyllo with no added fat if possible )
olive oil , for brushing
10 -11 ounces tomatoes , thinly sliced

Instructions

1.Preheat the oven to 385°F (200°C) and line a baking sheet with parchment paper.

4.Add the egg mixture to the feta cheese mixture. Mix until well blended and set aside.
5.Place one phyllo sheet onto the parchment paper, brush with olive oil, and add another layer on top, repeating the process until you have used 6 or 7 phyllo sheets.
6.Pour the feta mixture onto the pastry, roughly spreading it out leaving a 1 inch border around the edge.
7.Arrange the thinly sliced tomatoes on top of the feta cheese.
8.Brush the edges of the pastry with olive oil, and bake the tart for 25-30 minutes, until the phyllo pastry is crispy and golden.
9.Garnish with additional fresh chopped mint, if desired, and serve warm or at room temperature.
