4 tablespoons olive oil
1 lime , juice of , only
1 garlic clove , minced
salt
pepper
3 tomatoes , seeded and diced
1 cucumber , peeled , seeded and diced
2 scallions , chopped
1/3 - 1/2 cup mint leaf , chopped
1 jalapeno chile , seeded and chopped ( optional )

Instructions

1.In a large bowl, whisk together olive oil, lime juice, minced garlic, salt, and pepper.

3.Toss everything gently until well mixed.
