Ingredients

1 tablespoon cooking oil
1 tablespoon split Bengal gram ( chana dal )
1 teaspoon skinned split black lentils ( urad dal )
4 dried red chile peppers
2 teaspoons coriander seeds
1 teaspoon cumin seeds
1 tablespoon flaked coconut
2 tablespoons cooking oil
1/4 cup peanuts
1 teaspoon mustard seeds
2 large onions , minced
3 green chile peppers , halved lengthwise
2 sprigs fresh curry leaves
1/4 teaspoon asafoetida powder
3 tomatoes , minced
1/2 teaspoon ground turmeric
1/2 teaspoon white sugar
salt to taste
3 cups cold , cooked white rice
2 tablespoons chopped fresh cilantro , for garnish
Tomato Bhath, also known as Tomato Rice, is a popular South Indian dish that is enjoyed as a main course meal. This delicious recipe combines steamed rice with a blend of spices, tomatoes, and lentils—all sautéed to create a delicious, flavorful dish. Instructions

1.Heat 1 tablespoon of oil in a pan and add split Bengal gram (chana dal) and skinned split black lentils (urad dal).
2.Roast the dal until golden brown and then add dried red chile peppers, coriander seeds, cumin seeds and flaked coconut. Fry for another 2 minutes.
3.Transfer the mixture to a blender and make a smooth paste.
4.Heat 2 tablespoons of cooking oil in the same pan and add peanuts. Cook until they turn a light shade of brown and then transfer to a bowl.
5.In the same pan add mustard seeds and let it splutter.
6.Add minced onions, green chile peppers, fresh curry leaves and asafoetida powder until onions turn translucent.
7.Add minced tomatoes and cook until it turns mushy. Now add ground turmeric, white sugar and salt to taste.
8.Add the roasted spice paste from the blender and cook for 5 minutes.
9.Add cooked white rice and mix gently until the rice absorbs all spices, and cook on low heat for 5 minutes.
10.Garnish with chopped fresh cilantro.
