1 cup heavy cream
3 cups low sodium chicken broth
salt and pepper
1 pinch granulated sugar
1/2 cup chopped basil , fresh , DIVIDED

Instructions

1.Melt butter in a large saucepan over medium heat.
2.Add onions, celery and carrots, and sauté until soft.
3.Stir in flour and cook for 2 minutes.
4.Add diced tomatoes, cream, chicken broth, salt, pepper and sugar, and bring to a boil.
5.Reduce heat and simmer for about 30 minutes.
6.Blend the soup in small batches until smooth.
7.Place the soup back in the saucepan and heat until warm.
8.Stir in half of the fresh basil.
