Ingredients

2 sheets frozen shortcrust pastry , thawed ( use gluten-free option listed above if required )
150 g ricotta cheese , low-fat can be used
1 egg , beaten
4 teaspoons finely chopped chives
4 teaspoons finely chopped basil
4 teaspoons parmesan cheese , finely grated
1 pinch salt
1 pinch pepper
12 cherry tomatoes
Tomato and Ricotta Tartlets are a delicious and healthy appetizer that can be served at any gathering. Instructions

1.Preheat the oven to 200C/180C fan/gas 6.
2.Roll out the pastry and use a 7.5cm round cutter to cut out 12 circles.
3.Press each circle into a muffin tin.
4.In a bowl, mix together the ricotta cheese, beaten egg, chives, basil, parmesan cheese, salt, and pepper.
5.Spoon the mixture equally into each pastry case.
6.Cut each cherry tomato in half and place 2 halves on top of each tartlet.
7.Bake in the preheated oven for 15-20 minutes until the pastry is golden and the filling is set.
