Ingredients

750 g fresh mussels
1/2 cup water
1/2 tablespoon olive oil
2 garlic cloves , finely chopped
1 tablespoon tomato paste
1 can diced tomatoes
1 chili , finely chopped
1 tablespoon chopped fresh basil leaf ( and extra to garnish )
1/2 teaspoon sugar ( optional )
1/2 cup white wine
sea salt and black pepper
crusty bread , to serve
Tomato and Chilli Mussels are a delicious and easy way to enjoy fresh seafood. This recipe features plump, juicy mussels cooked in a rich tomato sauce with a hint of spice. Instructions

1.Rinse the mussels in cold water, discarding any that are open or have broken shells.
2.In a large pot, heat the olive oil over medium heat. Add the garlic and chili, cooking until fragrant, about 1-2 minutes.
3.Add the tomato paste and stir for an additional minute.
4.Pour in the diced tomatoes and white wine, then add the basil and sugar (optional). Season with salt and pepper.
5.Raise the heat to high and add the mussels and water, stirring to coat. Cover the pot and cook for 6-8 minutes, shaking the pot occasionally, until the mussels have opened.
6.Serve the mussels in bowls, garnished with fresh basil and accompanied by crusty bread for dipping.
