Ingredients

140 g unsalted butter , at room temperature
2 large eggs , beaten ( each 60g net weight )
65 g fresh breadcrumbs
80 g ground almonds
2 garlic cloves , peeled and crushed
15 g picked thyme leaves
100 g ricotta cheese
20 g parmesan cheese , finely grated ( or vegetarian alternative )
maldon sea salt and black pepper , to taste
320 g puff pastry ( homemade or shop-bought )
sunflower oil , for greasing
1 kg medium tomatoes , cut into 1cm-thick slices ( about 10 tomatoes )
12 anchovies packed in oil , roughly torn ( optional )
2 tablespoons olive oil
Tomato and Almond Tart is a delicious, savoury tart that is perfect for a quick dinner or a special occasion. The tart is made with a combination of homemade or shop-bought puff pastry, ground almonds, ricotta cheese, breadcrumbs, garlic, thyme and parmesan cheese. The tart is then filled with juicy and tangy slices of fresh tomatoes, seasoned with olive oil, salt, and crushed black pepper. The addition of anchovies (optional) adds a depth of umami flavor to the dish. This Tomato and Almond Tart is a healthy, vegetarian alternative that is easy to make and perfect for a cozy night in with family and friends.

Instructions

1.Preheat the oven to 200°C (fan)/220°C/gas mark 7.
2.In a medium-sized bowl, cream the butter using an electric mixer until pale and fluffy.
3.Add the beaten eggs gradually, mixing well between each addition.
4.Mix in the breadcrumbs, ground almonds, garlic, thyme, ricotta cheese, and Parmesan cheese.
5.Season with salt and black pepper.
6.Roll out the pastry onto a floured surface to roughly the size of a large dinner plate.
7.Grease a 23cm loose-bottomed tart tin with sunflower oil and line with the rolled-out pastry.
8.Trim the edges and spread a thin layer of the almond mixture over the base of the tart.
9.Arrange the sliced tomatoes over the top of the almond mixture in a spiral pattern.
10.Press the anchovy pieces (if using) into the spaces between the tomatoes.
11.Brush the olive oil over the tomatoes and season with salt and black pepper.
12.Bake the tart in the preheated oven for 35-40 minutes until the filling is golden brown, and the tomatoes are cooked through.
13.Serve hot or cold, on its own or with a fresh green salad.
