Tomato Almond Pesto (Trapanese) is a traditional Sicilian sauce made with roasted cherry tomatoes and almonds. It is a flavorful alternative to the classic Basil Pesto, and it can be used in a variety of dishes, from pasta to sandwiches. This recipe also calls for anchovies, which add a salty umami flavor to the pesto, but they can be omitted for a vegetarian or vegan version. The inclusion of golden raisins and capers gives the sauce a sweet and sour flavor, making it a versatile condiment that can be used to elevate any dish.

Instructions

1.Preheat the oven to 350°F.
2.Spread the cherry tomatoes on a baking sheet and roast in the preheated oven for 10-15 minutes or until slightly charred.
3.In a food processor, pulse the almonds, roasted cherry tomatoes, basil, Parmesan cheese, olive oil, garlic, anchovy fillets with oil, pepperoncini pepper, golden raisins, capers, red pepper flakes, salt, and black pepper until coarsely ground.
4.Continue to pulse until the pesto has reached your desired consistency, being careful not to over-process.
