Ingredients

1 lb fresh tomatillo
1 cup milk , for soaking
1 egg , beaten
1 teaspoon lemon juice
1/2 teaspoon Tabasco jalapeno sauce , to taste
1/2 cup flour
1/2 cup fine grain semolina meal or 1/2 cup finely ground yellow cornmeal
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons oil or 2 tablespoons lard , for frying
fresh minced cilantro

Instructions

1.Preheat the oven to 375°F.
2.Remove the tomatillo husks, rinse and dry with paper towels.
3.Place the tomatillos in a shallow dish and cover with milk and lime juice; let soak for 10 minutes.
4.In a separate shallow dish, whisk together the beaten egg and Tabasco jalapeno sauce.
5.In a third shallow dish, whisk together the flour, semolina meal, salt and black pepper.
6.Heat the oil or lard in a large skillet over medium-high heat.
7.Dredge each tomatillo in the flour mixture, then the egg mixture, and finally the flour mixture again.
8.Place each tomatillo in the hot skillet and cook for 2-3 minutes on each side, or until golden brown.
9.Transfer the tomatillos to a baking sheet and bake for 10-12 minutes, or until crispy and tender.
10.Remove from the oven and sprinkle with fresh minced cilantro before serving.
