Ingredients

2 large potatoes , diced , skins on
4 tablespoons ketchup
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon garlic salt
1 pinch cayenne
1 can pinto beans , drained and rinsed
1/2 bunch fresh cilantro , coarsely chopped , save some for top
6 corn or 6 flour tortillas
1 jar tomatillo salsa ( you can make your own as well )
1 cup sharp cheddar cheese , shredded
sour cream , to serve

Instructions

1.Preheat the oven to 350°F.
2.Boil the diced potatoes until tender and drain them.

7.Fill the tortillas with the skillet mixture and roll them.
8.Place the rolled tortillas in the baking dish, seam side down.
9.Pour the remaining tomatillo salsa over the tortillas and sprinkle cheddar cheese on top.
10.Bake for 20-30 minutes until the cheese is melted and bubbly.
11.Serve topped with fresh cilantro and a dollop of sour cream.
