Ingredients

8 dried guajillo chilies , rinsed free of any dirt , seed , veins and stems , discarded
10 cups tomatillos , husks dicarded
3 jalapenos , seeds and veins removed
6 shishito chilies , stems removed
1 onion , peeled and quartered
1 bulb of garlic , cloves separated skin on
1 lime , zested then sliced in halve
1 tablespoon avocado oil
1 tablespoon sugar ( optional )
1 teaspoon sea salt or 1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon oregano
1/2 teaspoon dried chipotle pepper
1/2 teaspoon citric acid , optional I did use and had 3 . 2 ph for canning
1 bunch cilantro ( optional ) or 1 bunch parsley , rinsed and rough chopped ( optional )

Instructions

1.Preheat oven to 400°F ( 205°C ).
2.Soak guajillo chilies in hot water for 15 minutes , drain well.
3.In a large bowl, mix tomatillos, jalapenos and shishito chilies with avocado oil , transfer to a baking sheet.
4.Add onion , garlic and lime halve beside.
5.Roast for 20~25 minutes or until the vegetables is charred and tender.
6.In a blender , add the roasted vegetables, soaked guajillo chilies, oregano, dried chipotle pepper, citric acid, sugar ,sea salt , black pepper , and 1/2 cup of water .
7.Pulse until smooth and transfer to a heavy-bottomed pot.
8.Bring the mixture to a boil then reduce the heat to low. Simmer the salsa for 15 minutes while stirring occasionally.
9.Season the salsa with additional salt or sugar if needed.
10.Let the salsa cool down and add chopped cilantro or parsley ( optional ).
11.Add salsa to sterilized canning jars and follow the proper canning process.
