Ingredients

2 large tomatoes
3 tablespoons dry breadcrumbs
3 garlic cloves , minced
2 tablespoons fresh parsley , chopped
3 tablespoons olive oil
salt and pepper , to taste

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Cut the top off each tomato and set top aside. Scoop out seeds and pulp from each tomato, leaving hollow shells.
3.In a small bowl, combine the breadcrumbs, minced garlic and chopped parsley. Fill each tomato with the breadcrumb mixture.
4.Place filled tomatoes upright on a baking dish. Drizzle each with olive oil and sprinkle with salt and pepper.
5.Replace the tomato tops.
6.Bake for 15 to 20 minutes or until tops are browned and tomatoes are heated through.
