1 bay leaf
1 stalk celery , minced
1 tablespoon cider vinegar
1 teaspoon onion juice

1/4 cup water
2 cups cottage cheese , sieved
3/4 teaspoon salt
1/8 teaspoon paprika
1/2 cup whole milk

Instructions

1.In a small bowl, sprinkle 2 tablespoons gelatin over 1/2 cup water and let set.
2.In a medium saucepan, cook 2 cups chopped tomatoes with 1/2 teaspoon salt, a pinch of pepper, 1 bay leaf, and 1 minced celery stalk over low heat for 20 minutes until soft.
3.Remove the bay leaf and puree the tomato mixture until smooth.
4.Add 1 tablespoon cider vinegar and 1 teaspoon onion juice to the puree.
5.In another small bowl, sprinkle 1 1/2 tablespoons gelatin over 1/4 cup water and let set.
6.In a large bowl, mix 2 cups sieved cottage cheese with 3/4 teaspoon salt, 1/8 teaspoon paprika, and 1/2 cup whole milk.
7.Microwave the gelatin mixture for 20 seconds until dissolved and add it to the cottage cheese mixture.
8.Layer the tomato puree and the cottage cheese mixture into a greased 1 1/2 quart mold, starting and ending with tomato puree and making 3 alternating layers of each.
9.Chill in the refrigerator until set, at least 4 hours or overnight.
10.To unmold, run a knife around the edges and invert onto a serving plate.
