Ingredients

3 tablespoons vegetable oil
2 inch piece fresh ginger root , peeled and minced
2 onions , halved and sliced
1/2 head cauliflower , cut into florets
3 carrots , peeled and sliced
3 tablespoons vindaloo curry powder
6 tablespoons tomato paste
1 can coconut milk
1 cup vegetable broth
1 can garbanzo beans ( chickpeas ) , drained and rinsed
1 pound extra-firm tofu , cut into 1-inch cubes
1 cup mushrooms , sliced
salt to taste

Instructions

1.Heat the vegetable oil in a large pot over medium-high heat.

3.Stir in the cauliflower and carrots and cook for 5-7 minutes, or until the vegetables begin to soften.
4.Add the vindaloo curry powder and tomato paste and cook for an additional 3-4 minutes, stirring constantly.
5.Pour in the coconut milk and vegetable broth and bring to a simmer.
6.Add in the garbanzo beans, tofu cubes, and sliced mushrooms and simmer for 10-15 minutes or until the vegetables are tender and the sauce has thickened.
7.Season with salt to taste and serve with rice or naan bread.
