28 ounces vegetable broth

2 grilled tofu patties
12 ounces monterey jack cheese ( optional ) or 12 ounces Mexican blend cheese , shredded ( optional )
1 cup corn tortilla chips , broken into pieces ( optional )

Instructions

1.Heat oil in a large saucepan on medium heat.
2.Add onion, garlic, jalapeno pepper, green pepper, and corn, and cook for 5-7 minutes or until vegetables are soft.

4.Add vegetable broth, diced tomatoes, tomato sauce, and grilled tofu patties.
5.Bring to a boil and then reduce heat to low and simmer for 20-30 minutes.
