Tofu Tikka Masala is a vegetarian twist on a classic Indian dish that is usually made with chicken. Tofu is used as a protein substitute, and it pairs perfectly with the spicy tomato-based sauce. The dish is easy to make and can be customized to your preferred level of spiciness. This recipe requires a few specialty ingredients, such as fenugreek leaves, which add a unique flavor to the dish. Overall, Tofu Tikka Masala is a hearty and healthy meal that is perfect for a cozy night in or as a meal prep option for the week ahead.

Instructions

1.In a large bowl, mix the grated ginger, chopped garlic, and plain soy yogurt until well combined.
2.Cut the extra firm tofu into bite-size pieces and add them to the bowl. Toss until the tofu is completely coated with the yogurt mixture.
3.Heat a large saucepan over medium heat and add the tofu mixture. Cook until the tofu is lightly browned and crispy, stirring occasionally.
4.In a separate bowl, mix the tomato sauce, diced tomatoes, tomato paste, fenugreek leaves, red chili powder, garam masala powder, turmeric powder, and crushed red pepper flakes.
5.Add the tomato mixture to the pan and stir until well combined with the tofu. Simmer for 10-15 minutes until the sauce is thick and the tofu is cooked through. Serve over rice or with naan bread.
