Ingredients

1 block of firm tofu
2 tbsp olive oil
1/4 red onion chopped
1/2 bell pepper chopped
1/4 tsp turmeric
1/2 tsp garlic powder
Salt and pepper to taste
Handful of spinach

Instructions

1.Drain and press tofu with paper towels to remove excess water.
2.Heat olive oil in a skillet over medium heat, add onion and bell pepper and cook for 5 minutes.
3.Crumble tofu with your hands into the skillet and sprinkle with turmeric, garlic powder, salt, and pepper.
4.Stir and cook for 5-7 minutes until tofu is slightly browned.
5.Add spinach and cook until wilted.
6.Serve hot with toast or potatoes.
