Ingredients

1 package dried rice noodles
1/4 cup rice vinegar
1/4 cup fish sauce
1/2 lime , juiced
2 tablespoons soy sauce
2 teaspoons white sugar
1/8 teaspoon tamarind paste
1 tablespoon paprika
1 teaspoon ground cayenne pepper
1 tablespoon vegetable oil
2 eggs , beaten
1 tablespoon vegetable oil
1 bunch green onions , chopped
3 cloves garlic , minced
1 container tofu , drained and cubed
1 cup bean sprouts
1/2 cup coarsely chopped dry roasted peanuts

Instructions

1.In a large bowl, pour hot water over the dried rice noodles and let them soak for 30 minutes.
2.In a small bowl, whisk together the rice vinegar, fish sauce, lime juice, soy sauce, sugar, tamarind paste, paprika, and cayenne pepper. Set aside.
3.In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
4.Add another tablespoon of vegetable oil to the skillet and cook the chopped green onions and minced garlic for 1-2 minutes, until fragrant.
5.Add the cubed tofu to the skillet and cook for another 2-3 minutes, until heated through.
6.Drain the rice noodles and add them to the skillet along with the prepared sauce. Toss everything together until the noodles are coated in the sauce and heated through.
7.Add the scrambled eggs and bean sprouts to the skillet and toss everything together again.
8.Serve the Pad Thai hot, garnished with the chopped peanuts.
