Instructions

1.Preheat your oven to 425°F (218°C) and cover a baking sheet with cooking spray.
2.In a medium bowl, whisk together the sugar, Braggs liquid aminos, mirin, orange rind, ginger, and rice vinegar to make the marinade.
3.Cut the baked tofu into 16 pieces about 2 1/2 inches long and 1/4-inch thick.
4.Marinate the tofu in the mixture for about 30 minutes, covering the bowl and stirring occasionally.
5.Line up two pieces of green onion tops lengthwise and place a piece of the marinated tofu on top of them.
6.Roll up the onions and tofu into a tight spiral, then place them on the prepared baking sheet.
7.Repeat with the remaining tofu and onions, then bake for 15 minutes or until golden brown and heated through.
