1 small onion , chopped
2 cloves garlic , minced
2 pounds fresh spinach , washed and chopped
1 package firm tofu
1/2 cup milk or soy milk
1 cup Parmesan or Asiago cheese
garlic powder to taste
salt and pepper to taste

Instructions

1.Heat a large skillet over medium heat.
2.Add butter and olive oil to the pan, once melted add onion and garlic, cooking for 2-3 minutes until tender.
3.Add spinach to the pan, a handful at a time allowing it to wilt down until all spinach is in the pan.
4.In a food processor, blend together tofu, milk, Parmesan or Asiago cheese, garlic powder, salt and pepper until smooth.
5.Pour blended mixture over the spinach and stir to coat all of the spinach.
6.Continue cooking over medium heat for an additional 5-7 minutes, or until the spinach is heated through and the sauce is bubbling.
