1/2 teaspoon salt
1/2 teaspoon pepper
2 cans diced tomatoes
1/3 cup tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1 teaspoon minced garlic

Instructions

1.Preheat oven to 375°F. Cook pasta shells according to package directions, then drain and rinse in cold water.
2.In a large mixing bowl, combine grated carrot, shredded zucchini, chopped onion, tofu, Monterey Jack cheese, 1/2 cup shredded mozzarella cheese, ricotta cheese, egg white, salt, and pepper.
3.Stuff each cooked pasta shell with the tofu and cheese mixture and place in a 9x13-inch baking dish.
4.In a separate mixing bowl, stir together diced tomatoes, tomato paste, dried basil, dried oregano, garlic powder, and minced garlic. Spoon mixture on top of stuffed shells.
5.Bake in preheated oven for 25 minutes. Remove from oven and sprinkle with remaining 1/2 cup shredded mozzarella cheese. Return to oven and bake until cheese is melted and bubbly, about 5-10 minutes.
