400 g cannellini , beans drained
350 g firm tofu , chopped
1/2 cup whole wheat breadcrumbs
1/3 cup self raising flour
3 green onions , sliced
1 egg , beaten
2 tablespoons sweet chili sauce
1 1/2 tablespoons mint , chopped
1 1/2 tablespoons coriander , chopped
1/2 lemon , juice of
Tofu and Cannellini Bean Patties are a quick and easy vegetarian alternative to traditional meat patties. These patties are packed with plant-based protein from the cannellini beans and tofu, which makes them a great addition to a vegetarian or vegan diet. The sweet chilli sauce and herbs in this recipe give these patties a unique flavour profile whilst the self-raising flour and breadcrumbs help to bind everything together. Instructions

1.In a large mixing bowl, blend together cannellini beans and tofu until it forms a thick paste.
2.Mix in breadcrumbs, flour, sliced green onions, beaten egg, sweet chilli sauce, chopped herbs, and lemon juice.
3.Divide and shape the mixture into 8 patties.
4.Preheat a small amount of oil in a frying pan.
5.Place the patties in the frying pan and cook for approximately 2-3 minutes on each side or until crispy and golden brown.
