2 cups uncooked carnaroli rice
1/4 cup soy milk
1/4 cup apple juice
6 cups vegetable stock
1 container firm tofu , cubed
1 jar marinated artichoke hearts , drained , liquid reserved
2 cloves garlic , minced
1 can low salt yellow corn
cayenne pepper to taste

Instructions

1.In a pot, bring the vegetable stock to a boil and reduce to low heat to keep warm.
2.In a pan, heat olive oil and margarine together over medium heat.

4.Add uncooked rice to the pan and continuously stir until the rice is lightly toasted and well coated in oil.
5.Add soy milk and apple juice to the rice and stir until they are both absorbed by the rice.
6.Begin adding the vegetable stock to the rice 1 cup at a time and stirring until the stock is absorbed before adding the next cup.
7.While the rice cooks, heat a separate pan with 1 tablespoon of the liquid from the marinated artichoke jar.
8.Add garlic to the heated pan and sauté for 1 minute before adding cubed tofu to the pan.
9.Once the tofu is lightly browned, add in the marinated artichoke hearts and canned yellow corn.
10.Stir in the tofu and artichoke mixture into the risotto.
11.Season to taste with cayenne pepper and serve hot.
