Ingredients

1 large cooked chicken , meat removed and shredded
3/4 cup creamed corn
3/4 cup sour cream
4 tablespoons chopped pickled jalapeno peppers
1/4 cup chopped green onion
10 soft tortillas
2 cups shredded cheese ( we used tasty cheddar )
Todd's Chicken and Corn Enchiladas are a tasty and comforting meal that is full of flavor. The combination of shredded chicken, creamed corn, jalapeno peppers, green onions, and melted cheese make for a rich and satisfying dish that is perfect for a casual dinner with family and friends. In addition, enchiladas are an excellent way to utilize leftover cooked chicken and transform it into a completely new and delicious meal.

Instructions

1.Preheat your oven to 375°F
2.In a large mixing bowl, combine the shredded chicken, creamed corn, sour cream, pickled jalapeno peppers, and green onions.
3.Mix the ingredients thoroughly, and then set aside.
4.Warm the tortillas for about 15-20 seconds in the microwave or until they are soft and pliable.
5.Spoon roughly 2-3 tablespoons of the chicken mixture onto each tortilla. Roll the tortilla up tightly, and then place it seam-side down into a 9x13 inch baking dish.
6.Repeat until all the tortillas have been filled and rolled up.
7.Cover the enchiladas with shredded cheese, and then bake them in the oven for 20-25 minutes or until the cheese is melted and bubbly.
8.Remove the enchiladas from the oven, and let them cool and set for a few minutes before serving.
9.Garnish with additional chopped green onions and sliced jalapeno peppers if desired.
