Ingredients

450 g firm white fish fillets
3 tablespoons rice flour or 3 tablespoons cornflour
1 tablespoon fish sauce
1 egg , beaten
1/2 cup fresh coriander leaves
3 teaspoons red curry paste
1 -2 teaspoon chopped red chile ( optional )
100 g green beans , very finely sliced
2 spring onions , very finely chopped
1/2 cup oil , for frying
Tod Man Pla, also known as Thai Fish Cakes, are a popular street food in Thailand. These savory cakes are made from fish, spices, vegetables, and rice flour, creating a crispy and flavorful texture. Instructions

1.Cut the fish fillets into small pieces and place them into a food processor. Pulse until they are broken down, but not turned into a paste.
2.In a large mixing bowl, combine the rice flour, fish sauce, beaten egg, coriander, red curry paste and optional chopped red chilies until fully incorporated.
3.Add the fish to the mixture and fold until evenly distributed.
4.Add the green beans and spring onions to the bowl and mix until combined.
5.Add oil to a pan and heat.
6.Drop tablespoonfuls of the mixture into the hot oil and fry until golden brown, turning halfway through the cooking process.
7.Remove from the oil and let cool on a plate lined with paper towels.
8.For the dipping sauce, mix together the sweet chili sauce, soy sauce, vinegar, and sugar until well combined.
