4 lbs pork shoulder ( cut into 1/4-inch slices ) or 4 lbs boston butt ( cut into 1/4-inch slices )
Tocino is a popular Filipino breakfast food that is also enjoyed throughout the day. Typically made from sliced pork belly, the meat is marinated in a sweet and salty mixture and then fried until crispy. This version of Tocino (Version 6) uses pork shoulder or boston butt, which are leaner cuts of pork. The meat is marinated in a mixture of sugars, salts, and spices, giving it a deep flavor and a sweet caramelized glaze. Perfect for breakfast or brunch, this dish is often served with rice, fried egg, and tomato slices on the side.

Instructions

1.In a medium bowl, combine the brown sugar, white sugar, kosher salt, powdered beets, anisette, and pink salt. Mix until well combined.
2.Place the sliced pork shoulder or boston butt into the bowl with the spice mixture. Toss until the meat is fully coated in the spices.
3.Cover the bowl with plastic wrap and refrigerate for at least 24 hours, up to 48 hours to allow the flavors to fully penetrate the meat.
4.Preheat oven to 375°F. Line a baking sheet with aluminum foil. Place the marinated pork slices on the baking sheet and cook for 25-30 minutes or until golden brown, flipping halfway through.
5.Serve hot with rice and/or fried egg.
