1/2 cup mixed glace fruit , chopped
2 tablespoons brandy
300 ml cream
2 teaspoons caster sugar
125 g dark chocolate
15 g butter
2 liters vanilla ice cream
1 teaspoon vanilla
2 teaspoons cocoa
60 g almonds , slivered
60 g coconut biscuits
300 ml cream , extra
Toasted Nut Cassata is an indulgent frozen dessert that is perfect for special occasions or as a treat at the end of a long day. The mix of vanilla ice cream, macerated mixed glace fruit, toasted almonds, coconut biscuits, and rich dark chocolate create a decadent and satisfying dessert that is difficult to resist. This recipe is easy to prepare, and with its beautiful presentation, it is sure to impress your guests.

Instructions

1.Place the mixed glace fruit and brandy in a small bowl and leave for 1 hour to macerate.
2.In a bowl, whisk together cream and caster sugar until soft peaks form.
3.Melt dark chocolate and butter in a heatproof bowl set over a saucepan of simmering water, stirring occasionally, until smooth. Remove from heat and cool slightly.
4.Stir ice cream, vanilla, cocoa, and half the almonds in a large bowl until smooth.
5.Roughly crumble biscuits into the bowl and stir gently to combine. Add macerated mixed glace fruit and fold through cream and chocolate mixture.
6.Pour mixture into a greased and baking paper-lined 6-cup pudding basin or loaf tin. Freeze for at least 6 hours, or until frozen.
7.Remove from freezer. Dip base of basin or tin in hot water and turn out onto a platter. Remove baking paper and scatter with remaining slivered almonds.
8.Serve immediately, sliced, with extra whipped cream, if desired.
