Ingredients

1 cup cold water
14 ounces fat-free sweetened condensed milk
1 1/2 ounces sugar-free instant vanilla pudding mix
8 ounces low-fat cream cheese , softened
1/2 teaspoon almond extract
8 ounces frozen light whipped dessert topping , thawed
1/3 cup water
1 cup Amaretto ( almond-flavored liqueur )
24 ladyfingers , packages
1/2 cup toasted crushed almonds , divided
This Toasted Almond Tiramisu is a unique twist on the classic Tiramisu recipe. The dish contains the same layers of ladyfingers and creamy filling, but it is flavored with Amaretto liqueur and almond extract. Toasting the almonds brings out their natural sweetness and enhances the flavor of the dessert. It is not as high in saturated fat and calories as traditional Tiramisu but still tastes creamy, rich, and delicious. It is a favorite dessert especially during summer or when hosting a dinner party.

Instructions

1.In a large bowl, combine cold water, sweetened condensed milk and vanilla pudding mix. Beat until smooth and well combined
2.In another bowl, beat the cream cheese and almond extract until light and creamy.
3.Gradually add the pudding mixture to the cream cheese mixture, beating until smooth and creamy.
4.Add the whipped topping and gently fold it in the mixture until well combined.
5.In a small bowl, mix together water and Amaretto. Dip each ladyfinger in the mixture and place in the bottom of a 9x13 inch dish.
6.Spread half of the pudding mixture over the ladyfingers. Sprinkle half of the crushed toasted almonds on top.
7.Dip remaining ladyfingers in the Amaretto mixture and place on top of the pudding mixture. Spread remaining pudding mixture on top.
8.Cover and chill in refrigerator for at least 30 minutes or until set. Sprinkle remaining toasted almonds on top before serving.
