4 cups flour , sifted
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
1 cup margarine
1 1/2 cups coffee , freshly brewed
1/2 cup brandy
1 cup honey
1 cup sugar
1 teaspoon cinnamon
1 teaspoon allspice
1 cup almonds , coarsely chopped
1 cup raisins
whole almond , to taste
3 cups sugar
1/2 cup honey
3/4 cup water
1/4 cup brandy
1 lemon , juice of
3 tablespoons orange blossom water ( optional )
Tishpishti Cake is a traditional Greek dessert, usually eaten on special occasions such as Easter. This classic recipe has been passed down for generations, with minor variations depending on the region. The cake has a unique combination of spices and nuts, and sweetened with honey. The cake is baked until golden brown and then soaked in honey syrup to create a spongy texture and moistness. Instructions

1.Preheat oven to 325 degrees F (160 degrees C).
2.In a large bowl, mix together flour, baking soda, baking powder, and salt.
3.In another bowl, cream together margarine and 1 cup of sugar until light and fluffy.
4.Add 1/2 cup of brandy, 1 cup of honey, 1 cup of coffee, cinnamon, and allspice to the margarine mixture and combine completely.
5.Gradually add the flour mixture into the wet mixture until incorporated.
6.Add in the almonds and raisins.
7.Grease a 9x13 inch baking pan and pour the batter into the pan. Decorate your Tishpishti by placing whole almonds on top.
8.Bake the cake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
9.To make the honey syrup, combine 3 cups of sugar and 1/2 cup of honey in a small pot. Pour in 3/4 cup of water and bring the mixture to a boil over medium heat, stirring occasionally.
10.Turn the heat to low, and add lemon juice and brandy to the pot. Let the mixture simmer for 15 minutes.
11.Remove the pot from the heat source and add the orange blossom water. Mix well.
12.After removing the cake from the oven, immediately pour the honey syrup all over the hot cake. Let the cake cool down and absorb the syrup.
13.Once cooled, cut the cake into squares and enjoy with a cup of freshly brewed coffee or tea.
