Ingredients

1/2 lb feta cheese
1 cup grated kefalotiri or 1 cup parmesan cheese
1/3 cup chopped parsley ( chopped spearmint is also nice )
2 eggs
pepper
3/4 cup melted butter ( or more )
1 lb phyllo dough ( pastry sheets )
Tiropitakia are a popular appetizer in Greece and are a delicious way to enjoy cheese in a new way. These little cheese pies are a great snack for a party or for a special occasion. They are crispy, flaky and filled with a warm cheese filling that is sure to please any crowd.

Instructions

1.Preheat oven to 375F.
2.Combine feta cheese, kefalotiri or parmesan cheese, chopped parsley, and eggs in a bowl.
3.Mix thoroughly and add pepper to taste.
4.Brush a baking pan with melted butter.
5.Unroll phyllo dough and cut into strips about 3 inches wide.
6.Take a strip and brush with melted butter.
7.Add 1 teaspoon of the cheese mixture on the end of the strip, then fold into triangles, like folding a flag.
8.Keep folding in triangles until you reach the end of the strip.
9.Brush the top of the triangle with butter and place on baking pan.
10.Repeat until all the cheese mixture is used.
11.Bake for 15-20 minutes or until golden brown.

PROS

Tiropitakia are easy to make and perfect for a party or for appetizers.
They are crispy, flaky and filled with delicious cheese flavor.

CONS

Phyllo dough can be tricky to work with, as it can dry out quickly.
Tiropitakia are not a low-calorie or low-fat snack, and should be enjoyed in moderation.
