Ingredients

3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk , warm
3/4 teaspoon salt ( less if the feta is very salty )
1/4 teaspoon pepper
2 cups feta , crumbled
8 ounces cottage cheese , small curd
4 ounces cream cheese , softened
6 eggs , beaten

Instructions

1.Preheat oven to 375°F.
2.In a medium frying pan, melt butter over medium heat.
3.Add flour, stirring constantly until mixture becomes smooth; Cook for about 30 seconds.
4.Gradually add warm milk, salt and pepper while stirring continuously, Cook for few minutes until thickened.
5.Add crumbled feta cheese, cottage cheese, and cream cheese, and stir well until everything is incorporated.
6.Beat eggs in a bowl, and then add to the cheese mixture with the other ingredients and mix thoroughly.
7.In a lightly greased baking dish of 13x9 inches, arrange 8-9 layers of pastry dough, and then spread over top of the cheese mixture.
8.Repeat with the remaining pastry dough and cheese mixture, ending with a final layer of pastry dough on top.
9.Cut the squares of size desired before proceeding.
10.Decorate with sliced olives if desired.
11.Bake in a preheated oven for about 45-50 minutes or until the top is golden-brown.
