Ingredients

2 1/2 cups strong black coffee , room temperature
1 1/2 tablespoons instant espresso powder
9 tablespoons dark rum
6 large egg yolks
2/3 cup sugar
1/4 teaspoon table salt
1 1/2 lbs mascarpone cheese
3/4 cup heavy cream ( cold )
14 ounces ladyfingers
3 1/2 tablespoons cocoa , preferably Dutch-processed
1/4 cup semisweet chocolate ( optional ) or 1/4 cup bittersweet chocolate , grated ( optional )

Instructions

1.Brew strong coffee and leave it to cool.
2.In a small bowl, mix espresso powder and rum and set aside.
3.In a heatproof bowl, whisk together egg yolks, sugar, and salt until well combined.
4.Place the bowl over a saucepan of barely simmering water and whisk constantly until the mixture thickens and forms ribbons when whisk is lifted, which should take about 5 minutes.
5.Remove from the heat and immediately add mascarpone cheese. Whisk until well combined.
6.In a separate large bowl, beat heavy cream until it forms soft peaks.
7.Fold the whipped cream into the mascarpone mixture. Set aside.
8.Dip ladyfingers into coffee-rum mixture, ensuring both sides are well soaked, and arrange them in a single layer in a 9X13 inch dish.
9.Spread half of the mascarpone mixture evenly over the ladyfingers.
10.Repeat the layer of soaked ladyfingers and spread the remaining mascarpone mixture over the ladyfingers.
11.Cover and refrigerate for at least 6 hours or overnight.
12.Sprinkle cocoa powder and grated chocolate over the top before serving.
