Ingredients

1 cup sugar
1/2 cup marsala wine
4 large egg yolks , at room temperature
1 cup mascarpone cheese
1 cup creme fraiche
1 cup cream , whipped

1 1/2 cups espresso or 1 1/2 cups coffee , cold
4 -6 tablespoons rum ( or to taste ) or 4 -6 tablespoons brandy ( or to taste )
24 -36 ladyfingers
4 tablespoons cocoa powder
2 tablespoons icing sugar

Instructions

1.In a saucepan, mix sugar and marsala wine over low heat. Keep stirring until sugar dissolves.
2.In a bowl, whisk egg yolks until pale and creamy. Gradually, add the marsala mixture to the egg yolks while whisking.
3.Add mascarpone cheese and crème fraîche to the mixture and beat until well combined.
4.Fold in the whipped cream gently.
5.In a shallow dish, mix espresso or coffee and rum or brandy. Soak ladyfingers in the mixture for a few seconds until just moistened. Line a deep rectangular dish with the soaked ladyfingers.
6.Pour half the cream mixture over the ladyfingers and level it. Repeat the layers with the soaked ladyfingers and the cream mixture.
7.Combine cocoa powder and icing sugar and sprinkle it on top of the cream layer. Cover the tiramisu with cling wrap and chill it for at least 4 hours. Serve chilled.
