Ingredients

6 large egg whites
1/2 teaspoon cream of tartar
1/8 teaspoon sea salt
3/4 teaspoon vanilla extract ( divided )
1/3 cup Splenda granular , sugar substitute plus

1/2 cup part-skim ricotta cheese
1/2 cup fat-free whipped topping ( or light )
1/4 cup decaffeinated espresso ( strongly brewed )
1/2 teaspoon unsweetened cocoa powder
mint sprig ( for garnish ) ( optional )

Instructions

1.Preheat oven to 350°F (175°C).

4.Combine flour and remaining vanilla extract in a separate bowl, then fold into egg white mixture.
5.Pour mixture into an 8-inch square baking dish sprayed with cooking spray, and bake for 12-14 minutes or until golden brown.
6.While cake is baking, mix together ricotta cheese and whipped topping in a large bowl until well blended.
7.Cut cake into 9 square pieces.
8.Spread 1 tablespoon of espresso over each piece of cake.
9.Add in remaining Splenda, and mix well.
10.Spread whipped topping mixture over the cake, and sprinkle with cocoa powder.
11.Refrigerate for at least 2 hours before serving.
12.Garnish with mint before serving (optional).
