Ingredients

1 lb stale plain butter pound cake
6 ounces brandy
12 ounces sherry wine
1/2 lb blanched almond , halved
3 cups your favorite custard

Instructions

1.Preheat the oven to 300F. Cut the pound cake into 1 inch cubes and place them on a baking sheet in a single layer. Toast the pound cake cubes in the oven until they are dry, golden brown and slightly crispy for about 10-12 minutes.
2.Bring sherry and brandy to boil in a saucepan over medium-high heat. Reduce heat to medium-low and let it simmer for 2-3 minutes.
3.Place the toasted pound cake cubes in a large bowl and pour the sherry and brandy over the cubes. Toss to combine and coat the cubes evenly. Let it sit for 30 minutes to 1 hour, stirring occasionally, until the cake cubes have absorbed the sherry mixture and become plump.
4.Spread 1/2 cup of the toasted almonds on the bottom of the trifle dish. Add a layer of the soaked pound cake cubes on top of the almonds. Spread 1 cup of custard on top of the layer of cake cubes, covering it well. Repeat the layers of soaked cake cubes and custard until you reach the top of the dish. Finish the top with a final layer of custard and sprinkle remaining almonds on the top.
5.Cover the dish and place it in the refrigerator for at least 6 hours, or overnight so that all the flavors are melded together.
6.Serve chilled and enjoy!
